Tucked into the second floor of a discreet building in Akasaka, Sushi Kazu balances reverence for Edomae tradition with a quiet confidence that draws regulars and connoisseurs alike. Chef Kazuya Watanabe works with minimal fanfare—serving a single seasonal omakase of around 20 courses, paced at the counter in quiet, contemplative rhythm. Ingredients are sourced daily from Toyosu and treated with restraint: a brush of nikiri, a flash of smoke, or a touch of aged vinegar rice. The space is intimate and reserved, with only eight counter seats and no room for walk-ins. At Kazu, every detail—from the temperature of the shari to the precise angle of each slice—is a quiet study in control and craftsmanship.
